[6.11.5] Upgraded to 6.12 RC, experienced multiple crashes. Downgraded to 6.11.5 and instability/crashes have followed

Built a brand new unRAID setup a month ago on 6.11.5. Rock solid, never had any issues. I upgraded to 6.12 RC over the weekend and had at least 2 instances of the server completely being unresponsive. Until then, 6.11.5 had a runtime of 14 days with no issues.

Within 24 hours of upgrading to 6.12 RC, my server became completely unresponsive. I could not log into the web UI, could not access any shares via macOS Finder and the monitor connected to my server had no input. Weird. I hard-rebooted the server, started the array and it seemed OK. Within 24 hours, the same issue occurred -- completely unresponsive server.

I then rolled back to 6.11.5, reinstalled some docker apps (the downgrade broke them) and this morning I woke up to an unresponsive server again.

I'm new to unRAID and I understand that the logs are wiped when you reboot. What can I do to try and diagnose what the problem is?
