Bon j'ai réussi à résoudre mon problème en mettant à jour en version 6.12.4 rc19

Sur le forum anglais une personne m'a indiqué ceci:

There was an error that could cause binaries to become unavailable during the shutdown sequence that has been fixed in the 6.12.4 rc18/rc19 releases

  3. relien's post in Which docker plex to choose? was marked as the answer
Well I just found a solution with the official plex docker thanks to this page: https://www.reddit.com/r/unRAID/comments/r6635u/help_with_nvidia_transcoding_on_plex_container/

So in extra parameter I put this: --runtime=nvidia --gpus all, capabilities=video

and I added the variable NVIDIA_VISIBLE_DEVICES with as value my GPU UUID
