I will most likely go for the Ultra 7 265k as it should do everything I want. The Intel bundle has a lot more pcie lanes + an extra m.2 slot + supports the asus m.2 bifurcation card + igpu.

I would look at doing the Ultra 7 265k or the 12 gen i7 or even the 13-14gen i7 will do great. The new 15th gen supports av1.

I am in a very similar boat. I have been eyeing up the Ultra 7 265k as its 20 cores and has QSV so you wouldnt need a additional gpu working on plex. I was pricing things out at MicroCenter and the pricing isnt terrible between a 14th gen and the 15th Gen. I think AMD is fine, but the price per dollar is favoring intel at the moment.
