Nothing but USB boot device issues

I built a Ryzen based system with 3x4tb drives and an 512nvme. 1 parity and 2 data disks with the NVME being a cache drive. I originally used an older 16gb Patriot USB drive I had and got everything setup. Everything was running fine for 12 hours but then when I went to use the Unraid NAS, the keyboard/mouse would not work. Trying to access via a browser on another pc and it wouldnt load. The clock on the GUI was updating, so I do not think it was completely frozen. I decided to hard reboot it without gracefully shutting down. When I tried to load it again, I got a unraid kernel panic not syncing vfs. Note: I am using a KVM and had switched back to the input for the Unraid server when the web interface stopped responding.

 

Being as how the usb drive was old and stuck out too much, I bought a SanDisk 32GB Cruzer Fit USB 2.0 Flash Drive https://www.amazon.com/gp/product/B07MPCJDXS/. I used the USB creator tool in windows to create a new boot usb. However, when attempting to boot I got a no bootable device error. I created it again this time allowing UEFI boot in the usb creator. Again same error when selecting USB as the boot device. Selecting UEFI does get me to the Unraid boot selector. If I select GUI, I get a bunch of the startup text and then eventually get a blinking cursor. I can actually hit the server from a web browser, but the GUI never loads on the actual server. If I select no GUI in the options, I do get to the command prompt to login and that seems to work. I did select USB as the first boot device and disabled all other boot options. I also can press f11 on my bios startup to select a boot drive. This is how I tried the booting differences between USB and UEFI USB.

 

I tried using the USB creator in Administrative mode on Windows and that didnt seem to fix anything. I have tried different ports.

While I can get the Unraid server working and use the web browser on a different computer, I am concerned about the stability given all these quirks. Thankfully I have no data on these drives yet, but it is getting old having to rebuild the array and parity drive. What do you think is going on with these boot drives?
