Backing up appdata when you have two separate appdata files on separate cache pools

I have two separate cache pools each for their own purposes. One for plex appdata and vms as well as a second for all my other app data and fast write speeds for shares. My question being is their a way to backup both of my appdata folders? I see CA backup and restore only allows you to select app data from one location. Am I missing something or is their another way to accomplish this?

    1. Tap the lock icon next to the address bar.
    2. Tap Permissions → Notifications.
    3. Adjust your preference.
    Chrome (Desktop)
