Currently I have icons for Main, Docker, Apps, etc down the left side and no text in the ribbon across the top. Try as I might I cannot figure out how to switch from the icons to the text across the ribbon. Everything works but it is just an annoyance I would like to fix, any help would be appreciated.

I'm not entirely sure what you mean - a screenshot would help - but it sounds like you've changed the Dynamix Color Theme in Settings -> Display Settings. The Azure and Gray themes look like your description; the White and Black ones have the traditional look. Click on the fourth icon from the top (it looks like meshed gears) and choose Display Settings in the User Preferences section. Then scroll down to Dynamix Color Theme and choose either White or Black.
