New build - how much RAM

Hi allpreviously I've ran unraid on an old HP microserver (N54 I believe) but moved away from using it due to slow speeds 

 

I've just got my old i7 7700k machine working again after figuring out it was a dodgy stick of ram preventing it from booting, So thought I would repurpose this.

 

My plans are;

Plex (and the downloaders for Plex) with 1 to 2 streams (maybe 4k)

Linux VM for running a couple of GPUs to mine rather than my main PC

Unifi docker for my home network

General NAS duties

 

Will 8GB of RAM be enough for the above? Or should I replace the dodgy stick of RAM taking it back to 16gb?

 

I only have 2x2tb and a 250gb cache at the moment, but this will be growing to probably 16TB soon.
