Two months ago I have troubles with my server, it reboots (not phisically) I notice I loose connection and access to my shares and Plex media... if I search on web unraid.local it appers as starting, then i have to login again and start the array, i have unplugged my parity disk, start new config keeping all data but server continues doing this

There's nothing logged about the crash, this usually points to a hardware problem, but one thing you can try it to boot the server in safe mode with all docker/VMs disable, let it run as a basic NAS for a few days, if it still crashes it's likely a hardware problem, if it doesn't start turning on the other services one by one.
