Best File System??

Unless you care about snapshots and/or checksums xfs is the best option for the typical user, to change you need to backup/move the data from each disk and re-format, it can be done one at a time.

To do this, I’m guessing I would need to redo my shares? I’m guessing that would get a little messed up?

Not sure I understand what you mean by alternate.
If you want the operation to be quicker, do it without parity and sync it afterwards.
If you want the operation to be safer, do it with parity active.
Your choice.
