I want to build an overkill maxy-expandable server....

Here my selected components until now:

 

CPU: 2 x INTEL XEON L5530 (8M Cache, 2.40 GHz, 5.86 GT/s, 60W) (more info)

Motherboard: SUPERMICRO X8DTH-6F (6xSATAII, 8xSAS, 7 (x8) PCI-E 2.0 (in x16 slot))    (more info)

RAM:UP TO 48GB - PLANNING 12GB (12 x Kingston 1GB 1333MHz DDR3 ECC Reg CL9 DIMM SR x8 w/TS Server Hynix T) (more info)

Just a quick point - dual CPU and 12GB ram are way overkill for unRaid - many unRaid system run very well with a single Sempron or Celeron cpu and 2 GB ram. :)  That config would also use a LOT more electrical power then you really need to, which translates to money, basically sitting idle. :) If you already have that mobo, run a single CPU and 4GB ram be more then enough.

Now that would be pretty sweet. :) Going to need a wicked power supply though...
