I want to build an overkill maxy-expandable server....

Just a quick point - dual CPU and 12GB ram are way overkill for unRaid - many unRaid system run very well with a single Sempron or Celeron cpu and 2 GB ram.   That config would also use a LOT more electrical power then you really need to, which translates to money, basically sitting idle. If you already have that mobo, run a single CPU and 4GB ram be more then enough.
