Forgive me for any stupid questions I am very new to this.
I've just setup unRAID today on my 5900x pc with 2x SN850 1TB nvme drives and I am confused as to how I set them up for raid 0.
I tried looking around and saw people saying to setup the cache and convert it to raid 0 or something but I cannot start an array with both nvme's as cache. Do i need more drives to do it?
I feel there should be a simple solution but I struggle to find anything on google, maybe i worded it badly?

You can only start the Array with at least one drive in the Array. You cannot only have drives in pools.

If you only need Pools and not the Array, the only workaround is to still assign a drive to one Array location and never use it (set your shares as Only).

It can be a HDD laying around or a flashdrive.

Once the Array is started you simply enter the Pool configuration by click the name of the first member, scroll down to the Balance section.

There use the dropdown menu and select 'Convert to raid0 mode' and hit the Balance button.

(maybe you can do that before Array start, not sure).
