I recently bought an LSI 9212-4i RAID card and have it set up with Unraid. All drives seem to be working so looks like it’s already in IT mode.

 

Is it possible to ‘break out’ each SAS port on the card into multiple SATA cables so I can connect more than 4 drives to the card? If so what cable/adapter would I need to buy.

You can, just need a SAS expander, e.g.:

 

MiniSAS cable from the HBA to the Expander, then with this example you could connect up to 32 devices, note that the PCIe slot is for power only, there are other models that don't require a PCIe slot, and can use for example a molex plug.
