I would like to label these fans to something like CPU Fan, Case Fan, etc. How do I do that?

I tried searching this forum but couldn't find anything.

Pretty sure that this is not part of stock Unraid.

Probably a plugin ?   You should ask for changes on that Dashboard section in the plugin support thread.
