Your system will continue to run normally when the trial expires. Technically, as long as you never stop the array or reboot the server after a trial has expired, it could run forever in trial mode. Your data is not touched in any way when a trial expires.

The data is untouched, so extending the trial or getting a paid licence would mean you can start the array again and continue as before.
