Plex Metadata Resets After System Reboot

I'm running Plex Inc's PMS Docker and have the parameters set up for hardware transcoding and its directory set to RAM. I followed the serveral guides online to set this up. Settings attached!

 

I suspect Plex's metadata is getting saved to RAM since every time my system reboots, my library mappings within the app are all reset and it re-downloads all my metadata files upon correcting the file mappings. Is that possible? Any help from the community would be greatly appreciated!
