Advice on which apps to use to emulate old Plex setup on Windows?

So I've made the switch to Unraid, I've set up my shares, migrated my Plex setup from Windows and got everything configured in a very basic sense.

Now I'm sort of at a loss in terms of which apps I should be using to make my life simple. With my old setup, it was very low tech but worked surprisingly well. It was a little HP Elitedesk with a large external drive connected, and it had Chrome Remote Desktop on it. I could remote into it from my phone or laptop where ever I was, browse to the thing I wanted, pop it into QBittorrent, at which point I set the download folder to either Movies or TV or whatever, set it to download sequentially. This meant I only had to perform one quick action, and Plex would index it almost immediately and I could start watching it normally within a minute. 

Now with Unraid, I just have no idea where to start. I've started researching Bazarr, Sonarr (as that seems to be what everyone says to use) etc but I'm not sure what combination of things I should be looking at. I also have no idea how to manage it remotely, ideally from my phone and laptop. I like the idea of Bazarr etc, but does using it mean I have to manage a list of Movies I want? And if I add a movie to that list, how long does it take to do it's thing? I'm not too fussed about the automatic downloading aspect or the automatically upgrading quality etc, I feel like it's ok to download something when I want it and I'll just get it at the quality I want then? 

Anyway, currently I'm just using Krusader to manually shift downloads into the correct folder.

 

Any advice would be greatly appreciated, even if it's just pointing me in the right direction.
