Memory filling up and causing issues

Recently I've been dealing with a few weird issues with my server. Recently I figured out it was a result of running out of memory - but I'm not sure how that makes any sense.

 

For example, today I was trying to convert an 800gb VDHX to QCOW2. About 2 hours in, the process stated that I was out of space. I checked used ram and it was very high, >99%. The rest of my server started to act bizarre, refusing to load menus and dropping or ignoring tasks. 

 

I have 256GBs of ram. From what I understand, unraid is supposed to use ram as a cache temporarily, but flush as necessary. I have >20TB available so space on disk should not be an issue. Why would unraid not flush ram properly or at least transfer the process to disk space smoothly? 

What path were you using as output? Any path that is not a disk, pool, or user share, is in RAM.

I might be an idiot, I'm pretty sure I wrote the whole path but maybe not. I'll try again and report back. Thank you.
