Need hardware recommendations

I have been out of the computer building world quite a few years.  I am looking for something to run Unraid on that can serve as a "1 PC, 2 gamer" setup.  Ultimately,  Planet Zoo/Coaster is the most demanding game we play.  We mostly do older stuff like skyrim and fallout games. I do not see the near future playing a new AAA game.

My problem with the motherboard is knowing how to tell if the motherboard can passthrough GPUs separately.  What is the key thing I need to look for?  As for CPU need a suggestion for that also.  That can occasionally handle 2 games running at once but will not be all the time at all.  But of course run plenty of docker containers.  Currently have a server running a Xeon E3-1271 v3 that handles everything I need including plex without issue and runs at barely 25% usage.

Thanks is advance for any suggestions.
