I'm running unraid 6.12 on my server with 2 x 8TB HDDs on the array and have 2 x 500gb NVME + 1 x 480gb SATA SSD spare but currently only have about 200gb worth of items stored as cache-only . I'm thinking of using the SSDs in either a single ZFS RAIDZ pool or otherwise have just a mirrored ZFS pool with the 2 NVME drives and not using the SATA SSD at all. My understanding is that including the slower SATA SSD in the ZFS pool as RAIDZ will mean that the speeds will be bottlenecked. Is it better to have a larger ZFS pool with >80% free space including the slower SATA SSD or a faster NVME ZFS pool that is approx 50% full? TIA

Correct, also note that zfs can only use 3 devices in a mirror if you create a 3 way mirror, so more redundancy but not extra capacity.

If i use the 3 devices i plan to have RAIDZ configurations so it should increase the capacity over using 2 drives mirrored but i'm not sure if this is wo.rth it considering the speed loss. I don't think the speed loss will be noticeable since i have a gigabit ethernet connection and only 2 VMs

Yes, with raidz you'll have close to 960GB usable, speed might be OK for gigabit, it also depends on the device models.
