Any way to Auto delete file and restart app on a daily schedule?

I’d like to setup unraid to delete the Plex codex folder then restart Plex daily at 5am. This would get rid of its codec/client comparability issue.  Is there anyway to make this happen?

You can install the User scripts plugin which should make this easy to achieve.

With that I could point it to a specific file to delete then tell it to restart Plex?

Yes - you write a simple script to delete the file(s) and then restart Plex.   You then schedule this in User Scripts to run when you want,
