Every time I power down I lose all docker info.

unRAIDServer-6.11.5-x86_64.zipWhenever I restart my server, which right now has been a lot, everything goes blank like it's never been used.  This never happened in the past and the only things I've changed was going from SSD to NVME drives.  During this process there may have been a setting or something that changed.  Luckily have several days of this I spent today putting everything up correctly then made an appdata backup which I'm now loading again.  What causes this? It's like my server has short term memory now.  I do have my appdata set to use the cache.  I have two NVME drive and one called system cache and the other called general cache.  A weird thing I've noted is the appdata is Cache ONLY and showing 3.68TB free however I don't know where that figure comes from.  The system cache is only 1TB. The other is 2TB. could this be why I'm losing my data ever time it restarts?

Check the paths for you docker containers.   If any of them are wrong they may not map to your current devices, and if so the location would be in RAM which would explain state being lost after a reboot.
