So I currently have 240 GB of SATA SSD in my box. I notice there is M.2 slot in the MOBO. Can the SATA SSD and the M.2 SSD NVME be combined for the cache pool? If it's possible, what will happen to the data, particularly the appdata, on it?

    Yes, if current filesystem is btrfs (or zfs for mirroring only).
