My understand of unRAID is that it doesn’t care what order the sd* devices present themselves in - all it’s looking for is a disk number to match to a serial number. So I can re-arrange cables to my heart’s content, correct?

So I can re-arrange cables to my heart’s content, correct? depends on the version of unRAID. Early versions will not figure it out on its own if the parity drive changes. You'll need to use the devices assignment page to assign it properly back to its original role in the array before you can start the array. Take a screen shot of the "devices" page before you re-cable. Then you'll know which drives goes where.
