unloading "appdata" and "domains" to SSD, with backup on array.

I am little confused, is it possible to have "appdata" and "domains" fully from SSD while also having mover sync these to the array in case SSD dies? It looks like I made the mistake of making mover do SSD -> Array sync, which deleted these from SSD and all containers and VMs failed to load after.

Not as you describe.   A file is meant to only be in one place, either array or a pool.   The closest you will get is using a plugin like Appdata Backup to periodically backup the appdata share to another location on the array.
