It seems like your disk1 ( sdb - TOSHIBA_MG03ACA400_14F2K1ITF ) has some physical problem and causes the filesystem problem which result in shares disappearance, you may enter maintenance mode to check.

Noted, is it possible that HDD is going bad? Or how to check this because I pretty much an idiot in IT. Just go to maintenance mode and do what there?

Also run an extended SMART test on disk1.
