Question about setting up unraid for the first time

Heyo, so i'm in the process of getting the parts i need together for my first homeserver/homelab setup and had a question regarding capacity.

 

I currently have a synology 2-bay nas with 2x6TB mirrored drives with about 5TB of data on it.

Out of my unused drives i have a 2TB and a 4TB as well as a 1TB 2.5" sata ssd.

I'm gonna get an 8TB drive soon as well.
 

What i'm thinking i'm gonna do once i get the hardware together is to do the following:
Start setting up unraid with an 8TB parity drive, 2tb and 4tb as datadrives and 1tb ssd as cache.

 

Will that give me enough storage on an unraid share to transfer over content from my old NAS?

And will i be able to put those 2 6TB drives in the array without issue afterwards?

Also, is adding a 2nd parity drive later down the line fine or will it cause me issues?
