not sure if this is the right spot but figured id start here 

Me and a friend realized we have 1 computers worth of parts laying around being

AMD ryzen 2700

64GB 3600mhz ram

Nvidia GTX 1070

750W PSU

6TB HDD

3TB HDD
1TB HDD

and a case and some fans

and we were wanting to throw this into a unraid server and run a minecraft server on it and down the road try some plex stuff maybe an Ark server and whatever else we feel sounds fun

but my question right now is will this be able to run a decent minecraft server with MAX like 4 people playing on it not all at once

Yes this hardware should run great for minecraft server.  Just be sure to increase the amount of ram that the docker can use.
