Server becomes unresponsive every night

New to unraid, I have a powerful lenovo workstation running it. Doing basic shares and media serving purposes with plex. 

Overnight the machine will not respond to the GUI, ping, not visible on the network and all services are offline. The machine is still running when I go down to check on it in the morning but will not respond to any network services. 
 

If I turn off all the docker containers the box will be very stable and I will no longer need to reboot it every night. But the second I turn any container on the machine will go into its unresponsive state at some point in the night.

The persistent syslog is missing.

Under the drive I found this in the logs folder outside of the .ZIP files.

That doesn't look like it, there are just a few lines logged.

Any area in particular I could be missing? I'm looking at the logs directory that's at the base of my boot device which is where I am logging to. 

Assuming there's been a reboot/restart since they were enable they would come with the diags, file would be called syslog-previous.
