Shinobi Docker using all my 128gb RAM

I shall be grateful if you could assist me fixing an issue I encountered when reinstalling Shinobi (it died about a year ago, and I had no time to fix). I followed the instructions from @SpaceInvaderOne. All was well, and then my server didn't respond. After a lot of trials and tribulations I was able to spot that all my ram was being consumed by the docker (all 128GB). I am recording to a 2TB HDD 2.5" over a GB network switch independent from the home network switch. The settings of my camera are as per the attached image (all 8 of them are the same). All of the settings provided by @SpaceInvaderOne were applied to the Shinobi server and streams. It works for a few minutes and you can see the ram being chugged away and then reaches 99% and the server becomes non-responsive. I have very very little experience with Linux and was thinking I could complete this project; obviously I hit a wall. Thanks for your assistance.

@SpaceInvaderOne Sorry to bother you with this. No one has responded to this query yet and I am at a loss. I did a reinstall of the app and before I could configure it I decided to run a test and see if it was any of my settings, but it's the same. As soon as the docker is turned on, the memory use cranks up pretty fast and reaches 99% before the server becomes unresponsive. I am running Unraid 6.12.8 now and the problem has not changed.
