I have searched the web to try to find an answer to this question and I am unable to find any speed tests or any kind of results.  So I am currently running on all magnetic storage spinning HDD's.

I have been thinking about transitioning everything over to Raid Z1 Pools.  But one of my main questions is, is there a R/W speed difference between Raid Z1 and the standard Unraid JBOD?

    Yes - ZFS is much faster.    You get improved performance at the expense of reduced flexibility.
