Complete noob trying to create a server for Video Editing/Production

I'm a video editor looking to create a server to store all my video projects on and edit off of. My knowledge in this is pretty surface level and I'm not the most confident in what I'm doing 😅. I wanted to run this by some more experienced people to see if what I at least had in mind makes sense. Like as far as hardware and how I'm planning on setting this up to see if I'm on the right track or not. 

 

Mosty spare parts from past PC builds

 

Hardware-

Motherboard: MSI M7 Gaming x470 (has onboard graphics)

CPU: AMD 2700x

RAM: Kingston 64gb 

GPU: Nvidia 1070ti (if still needed or recommended)

Storage -

2x 2Tb M.2 samsung 970 evo plus 

2x 480gb sata SSD (don't remember their exact brands/makes)

3x 8Tb seagate irowolf drives

 

So my thoughts are I'm going to use the the seagate ironwolf HDD's as cold storage drives in the unraid array to mostly archive projects on, possibly edit from if it's decently fast enough to. Then use the M.2 NVME samsung drives as hot storage in a raid 0 or zfs pool, where I'd edit projects from then move to cold storage when I'm done with the projects. I have some 480gb sata SSD's just sitting around, so I was wondering if it'd be worth using them in a cache pool. 

 

Any help or insight would be much appreciated. If there's anything else I should keep in mind, please feel free to let me know. Thank you!
