advice for RAM

I have a Ryzen 5 5600GT with 32GB RAM DDR4 at 3400MHz. I found two DDR4 modules of 8GB each but at 2400MHz in the drawer. If I mix them I know that the speed is reduced. Do you recommend reducing speed and moving to 48 GB or staying with 32?

If it were a gaming PC I would know what to answer, but I have no experience with servers

You should not enable XMP anyway for stability even when you're using faster RAM, so no, speed not important.

As to amount, depends what you do and need.
