Hello. Fairly new to this and would like some recommendations for how someone experienced would set up my hardware to minimise iowait. 
 

Currently running i5 12400, on a b760 MB, 64GB ram, 3x 970evo nvme ssd 1TB, crucial bx500 2TB sata ssd (currently not being used as it was slowing downloads used as a cache drive), plus 5x spinning drives for the array. No parity as all of the data is fully replaceable with zero effort on my part. 
 

Currently I am running 2x 970evo for the app data/system/images mirrored, 1x 970evo as a download cache, running Plex transcoding with ram. 
 

Currently getting issues with iowait fairly often running sabnzbd and all of the art’s and Plex, and it is causing issues with Plex streams stopping and starting periodically for outside users, even when it is a direct stream with no transcoding. 
 

How would you configure your setup to minimise iowait?

Try using exclusive shares (or disk paths for the containers) whenever possible
