How do I decommission smaller drives and pull the data?

Now that I can see this going to be a serious hobby, I want to get larger hdds. The rack space has become more valuable than a couple extra 1tb drives I have that are in the array. I want to swap them out for a couple 20tb hdds. How do I keep the data?
