Dear Unraid Gurus please help,

ive had this server for couple of years, and it was working fine, i did patch the Samsung PROs , but they weren't on the really bad firmware when they arrived that killed the controllers, so its not that their controller is bad, i did check them with writes etc.

the 3 NVMEs in queistion (1 parity and 2 for data) , i did replace one of the data ones, and parity ran and rebuilt it , and the data on it seems fine.

the data is just data , and some VM backups.

please help me identify the issue

The Unraid driver is crashing. This is almost always a hardware problem, most often bad RAM, but since it's a 13900K high probability it's a bad CPU with the Intel 13/14 Gen issue, if you have multiple sticks try using the server with just one, if the same try with a different one, that will basically rule out bad RAM.

i already had a 13900k CPU replaced after one of its cores went bad and was stuck at 100% util, probably because of the over-voltage intel issue.
would memtest rule out ram issue? because if it would , i would know that its CPU again for sure

Memtest is only definitive if it finds errors; you can still run it, but the one a time stick would be a better test IMHO, since it's very unlikely that you would have multiple bad sticks.
