Try recreating the flash drive, first backup the current one, then recreate it using 7.1.4 with the USB tool, confirm the flash drive boots with the stock install, and if yes, restore only the /config folder from the backup overwriting any existing files.

Problem is that I cant acces the USB at all. I think it died :(

Can I "reinstall" Unraid and get everything up again without losing data ?

Got a lot of data, some dockers and 1 Windows 11 WM that I would like not to lose

If you don't have a backup the user-templates folder will be missing, since they are stored in the flash drive, you can reinstall the same container you had using the same settings, and pointing to the existing appdata, and they should retain all the data.
