Issue setting up NAS for first time

Hello, I am just starting my home NAS journey and am running into issues getting started with Unraid. I have a Beelink ME Mini with new drives: a 1tb SSD and 2 2tb SSDs that I am trying to get set up and running for the first time. I successfully got the Beelink to boot into Unraid and got my web login working to the point of trying to set up my pools. I was going to run the 1tb drive as my cache and then the 2 2tb drives as a larger storage pool that is mirrored across the two drives as I don't have a lot of data needs and would switch to another config when I needed to add more drives. I have tried to set this up but each time I start the array I get 1 of 2 errors each time. If I leave the file system type as auto, I get an "unmountable: unsupported or no file system" error. If I change the file system type to any of the other options, I get an "unmountable: wrong or no file system". I have tried unassigning the drives from pools, removing the pools and starting them again all to no success. Any suggestions on what I should try next?
