The Array has 7 Data disks and 1 26TB Parity Disk... Does this length of time make sense?

Yes. This is a disadvantage to large-capacity parity and data disks. Any parity operation will take approximately 2 hours per TB.

My parity checks run on average around 180MB/s. The array is a mix of 18TB and 16TB drives.

If you have some smaller capacity drives in your array, 143MB/s seems very reasonable.
