I have setup a share "split level 2"  for a share at "disk1/Movies"  currently transferring files from an old NAS. I have noticed I'm at 38%,  when does unRaid start to utilise the other disks for this share.  Currently the folder hasn't been created on these disks yet.

 

 

We can't tell you because you didn't provide your directory structure and all the share settings.

If set as high water, which I believe is default, it will move to the next largest drive when the first is 50% full.

 

Most free will switch to the next largest when the the free space on the largest drive is less than the next largest.

 

Fill up will fill disk 1 until full then move to disk 2

Not exactly. High water will switch to the next drive when the first one is filled to 1/2 the size of the largest drive in the array ONLY IF the split level and the included or excluded disks allow it. These same conditions apply to the other allocation methods with the addition that the fill-up method also requires you to properly set the minimum-free space or the filling will fail with a disk full error instead of moving to the next drive.

 

As I posted before, providing the directory structure and the share settings is the only way to properly answer the question. Anything else is just a guess.

It would be just over 50% assuming the split level is correct for the disk structure and it allows it.

unless you specify split level 0, in which case,only those disks where YOU create the top level (user-share) folder will be used.
