Using RC5, would I benefit updatding to that RC6-test or whatever?

Have been using RC5 with limited issues. Issues I have been having were reported. Is there any reason to update to the latest RC6? Any benefit or just to keep updated.

That depends, partly, on your hardware configuration.  The most significant fix between rc5 and rc6-test2 is the elimination of one cause of duplicate files on user shares.  Unless you use an LSI disk interface, I think that all other changes could be considered as enhancements.

sort of un-related, but I am running a v5b13 and was considering upgrading to one of the latest RCs.  Can someone please point me to a post/thread somewhere on upgrade steps? Having trouble finding it.

Since you are already running a Beta 5 release, you need only copy over the new bzimage and bzroot files from the downloaded zipped file.  Then reboot unRAID.  (Backing up these same two files before doing this will make it easy to revert to your present release.) If you should encounter any problems, post your difficulties.
