So I've been reading some more of the forum lately as I am finally in the process of aquiring drives... And I see some disks that need firmware updates, some that need jumpers, some that need to be formatted a certain way, etc.

 

Are there any 2 and 3TB disks that "just work?"  As in, I take them out of the box, preclear them, install them, and walk away?

    I've never used a drive that didn't "just work". You'll be fine, any modern drive should plug and play with a bootable 5.x unRAID system.
