I managed to move over all my data from solo HDDs and NAS.

 

I didn't have a parity drive installed.

 

Now since all my data is on unRAID, I want to enable parity.  what are the steps? anything to keep in mind?

stop the array, add the parity drive, let it build parity.

You can, but it will slow down the process as the disk heads have to constantly be seeking between the parity calc and the media you are playing.
