I have never used Plex but have a lot of history with PS3 Media Server, Tversity and Mezzmo. Transcoding is almost exclusively the domain of the CPU and unfortunately I would not consider your I3 to be adequate for 1080p transcoding. It may be able to keep up with 720p real time. I have an AMD Phenom II x 4 955 that will not do it even overclocked. I would consider a 2500k to be the bare minimum for 1080p real time transcoding.

The one you posted is the last generation architecture. $10 dollars more but it's worth it. http://www.newegg.com/Product/Product.aspx?Item=N82E16819116775 RAM is fine but 16GB is overkill for this. 8GB is more than adequate. It's up to you though. Motherboard is fine. PSU is fine. Transcoding three 1080p streams at once is probably pushing it. I can't say it won't work but I wouldn't be surprised if it can't keep up. For one, probably two streams, it will work fine. I transcode uncompressed 1080p blurays on the fly all the time with my Core i3-2120 with no problems at all.
February 1, 201313 yr RAM is fine but 16GB is overkill for this. 8GB is more than adequate. It's up to you though. Agree with this. However, get two sticks of 4GB each. That way you can easily upgrade down the road if the 64 bit version of unRAID would benefit from it.
