Here's a possible build I'm putting together for a friend. Let me know if you would change anything.

Core i3-3220 is cheaper and will run cooler than that i5. The i5 is more than required for most common unraid tasks, including transcoding video on the fly.

I meant i5 since that was on his list but technically it's true for both I suppose.

So other than the CPU recommendation, would this be a good server for PLEX transcoding? Any other options I should consider? Is the motherboard a decent choice?

Yes, those parts seem like good choices. If you can swing the extra $30 per drive, the 3TB of that drive is on sale for $120 with promo code until the end of the day tomorrow. That'll give you 9TB or storage instead of 6TB.
