Hi I'm a total noob at linux  and I need to rename autoprocesstv.cfg.sample to autoprocesstv.cfg and also edit the file I am using putty to connect to my server can anyone help me with the linux comands to do this?  I have read loads of forums but perhaps my question is just to basic any help would be appreciated thanks.

Midnight commander will do what you need, and is already installed in unraid. Just type mc at the prompt after you log in with putty. Here is a tutorial on usage.

Do I have to do this everytime my server is rebooted or can I make this so I don't have to do it everytime my server is switched off? Thanks.

Where is Sickbeards data installed too?  If its on a cache drive or in the array then yes its fine, and easier to access/edit by navigating to it over smb/nfs.  If its not on a cache or array drive then it will be lost on reboot.

Also if you install ssh, you can then use WinSCP to access the files on your unRaid server easier.
