A parity drive is optional.  In fact many people recommend starting without a parity drive when doing the initial data load as that maximises the speed of the load.

 

Note, however, that until you add a parity drive any data on the array is not protected against disk failure.

Yes, but depending on the particular plugin you may be killing the memory stick with excessive writes. USB sticks are notorious for failing when subject to constant writing. It's much better practice to use a hard drive or SSD, something that is designed for constant writes.
