Plex - Unable to reset to pristine state

I had Plex running fine, but after a reboot it failed to come up correctly  - the GUI launches, but it doesn't see the local server. If I go into settings I see Web and Devices - no Server.

 

So I removed the container, and then deleted /mnt/user/appdata/plexmediaserver and re-installed from scratch.

 

I get the same result (no server) and it still auto-logs me in, which I would assume the config is not wiped as it should have no idea who my user account is.

 

Anyone else have issues with Plex like this? Or does anyone have any suggestions on where else I need to wipe data to get back to a pristine setup?

    3. Adjust your preference.
