Has anyone made a docker using the 3.2.7 controller version?

It wasn't created for Unraid, but work great.

Do you know what I need to do to run the 4.x image instead of the default latest?

Yes, instead of getting jasonrm/unifi:latest , change that to jasonrm/unifi:4.x in the creation of the docker page.

 

I might try creating my own docker soon for this and will only support 4.x.  I have readings to do regarding the base Image, etc.  In the meantime, this docker works fine!.
