You will have to reassign all your drives except for the one you don't want and rebuild parity. Make sure you assign the correct drive to the parity slot. Link to comment

Never tried to see if you can use the Unassigned Devices plugin to format a drive, but if you can't, you can assign the drive as the cache drive, format it xfs, then reassign your cache drive...
