How to add a second parity drive

I am setting up my array from scratch and would like to dedicate my two largest drives (5TB) as parity drives, how do I add a second drive for parity? Also, is a cache drive necessary? There may be only one or two streams coming from this server, otherwise its for backup storage. Does it matter which drive, in terms of size, I choose for cache?
